This new book, High-Pressure Processing for Next-Generation Foods: Safety, Quality, and Preservation, provides an in-depth and structured overview of high-pressure processing (HPP), from fundamental concepts and technological frameworks to advanced applications in food preservation. Responding to growing demand for safe, fresh-like, and minimally processed foods, the volume examines HPP as a versatile nonthermal technology that can enhance microbial safety and extend shelf life while helping preserve nutritional, functional, and sensory qualities.

Bringing together perspectives from food engineering, microbiology, chemistry, and product development, the book explores hydrostatic pressure treatment, pressure-assisted freezing and thawing, equipment and processing considerations, and the synergistic use of pressure with temperature and other preservation factors. It examines pressure-induced changes in food components and microbial inactivation, including effects on milk constituents and other sensitive food systems. Practical applications across eggs, fruits and vegetables, meat, and seafood are presented, along with regulatory requirements, safety considerations, and consumer acceptance.

Key features:
• Provides a foundation in the principles, mechanisms, and technologies of HPP
• Explores recent advances in pressure-based food processing and preservation
• Examines effects on food quality, microbial safety, and food components
• Describes applications across major food categories
• Addresses regulatory, safety, and consumer considerations

Overall, the book provides a comprehensive reference on the science, technology, and practical implementation of HPP for researchers, students, food industry professionals, and others interested in sustainable, safe, and high-quality food processing.
